What Is King Ranch Casserole?
This Texas legend combines layers of tortillas, chicken, cheese, and a spiced cream sauce — named after the famous King Ranch in South Texas. It's the ultimate comfort food that feeds a crowd.

- 3 cans (12.5 oz) chunk chicken, drained
- 12 corn tortillas, torn into pieces
- 1 can (10 oz) cream of chicken soup
- 1 can (10 oz) cream of mushroom soup
- 1 can (10 oz) Rotel diced tomatoes with green chiles
- 1 cup chicken broth
- 1 medium onion, diced
- 1 green bell pepper, diced
- 2 tsp chili powder + 1 tsp cumin
- 2 cups shredded Cheddar-Jack cheese

Preheat and prep. Preheat oven to 350°F. Grease a 9×13 inch baking dish. Sauté onion and bell pepper in a little oil for 5 minutes.

Make the sauce. Combine both soups, Rotel, broth, chili powder, cumin, sautéed vegetables, and drained chicken. Stir well.

Layer. Spread a third of the sauce on the bottom of the dish. Add half the tortilla pieces. Repeat layers, ending with sauce on top.

Add cheese and bake. Top generously with shredded cheese. Bake uncovered for 30 minutes until bubbly and golden. Rest 10 minutes before serving.
